I'm wiring up an encoder to Acorns DB9 port and have some questions. On the Acorn schematic, does the Z\ mean Z- ? Also I think the COM would be the ground on my encoder wiring (second picture) and the N/C would probably be the shield, does that sound right?

Yes, the slash following the letter means that it is the inverted signal so Z\ is Z- on your encoder pinout and so on. COM would be GND in this case.
No, N/C is not connected. Shield should go to shield as in the D shaped metal surrounding the pins. That conductor is typically soldered to the back before the shell is installed. If you are using a breakout, then there should be a terminal labelled "shield" or "GND".

Yes you are right. Shield is solderd to the metal housing.
