Pairs are black & white, red & pink, green & blue, yellow & orange.
I have found a SUMTAK data sheet for the Heidenhain ERN, which is more accurate to my wire colours and seems to match pairs above, hopefully this works.

It is the vocabulary that is incompatible, not the encoders.
When Centroid says "TTL", they mean open-collector outputs with just one wire per channel (in contrast to differential-driver outputs with two wires per channel. One-wire open-collector outputs are not suitable for use with Centroid controls.
When Heidenhain says "TTL", they mean a 5V square wave (in contrast to their analog current-mode or voltage-mode sine-wave outputs). Heidenhain's "TTL" outputs are differential-driver outputs, and are suitable for use with Centroid controls.
