OK, I got a look inside, but I have to say that I'm not exactly sure what I'm looking at. I disconnected and reconnected all of the cables and nothing has changed.
I did notice something odd, not sure if it's an issue or not (because it was working fine up until now). There is a nine conductor ribbon cable that is zip tied to itself not connected to anything. It looks like there is a nine pin receptacle right near by. Any relation? I didn't want to blow anything up by "testing" that. See the close up pic for that.

If the touch screen is not functioning. Try unplugging the USB cable and booting the machine, then plugging it back into the PC. If there is a different USB port on the PC, try that as well.
Leave the ribbon cable alone....it was working before. That ribbon cable goes to the monitor control panel (strip with the buttons) should not be needed. (Centroid might have suggested you connect it if it was an issue)
With power off. Unplug and reconnect the cables to the monitor to make sure they are fully seated as well.

The Touchscreen Controller is underneath the LCD Control Board. It then connects via USB to the NUC.

It took a few tries of unplugging and reseating the USB cables, but that seems to have fixed it, for now.
If it happens again, I will know where to look.

Glad its back up. I wonder if you have a flakey USB cable
