I'm not too familiar with it, but I think you change between "Z" and "@" for the axis label. I would try this through the motor menu first to see if it does what you want. Then P130 could be used to make the change... then G10 could be used to change P130 to change setup from a program or MDI.

I can get the manual Z to work, but after paying $1300 for the scale feedback option, I'd like the scale to work on the z-axis as well when in automatic mode.

Scales are now working correctly, however the Z-axis scale does not re-enable after re-enabling the z-axis. Since the subject of this thread no longer applies to this issue, I have started a new thread on this remaining issue here: viewtopic.php?f=20&t=2532&p=17945#p17945

Just one final addition before I mark this thread answered. LT;DR - it is possible to use the same linear scale for both the Z-axis on/off function and for scale feedback. The only caveat is a warning message that appears during configuration that warns you that the same scale is being used in two places. This message only appears when modifying the scale setup, or the encoder section of the parameter table and does not appear during normal operation. Everything appears to work correctly regardless of the warning message.
Cheers,
