Continuing work on my lathe conversion, I would like to reuse the FANUC spindle encoder. Its part# is A860-0309-T302 and it looks like it has the correct number of wires, but I have yet to find information to verify this.
Any help is appreciated.

Unless you can get specs, have a wiring diagram showing connections, I would not bank on reusing the encoder.
Get a line driver/differential encoder from automationdirect.com or directly from Centroid(along with their encoder cable) and put the correct encoder on. You would need a Medium or better a heavy duty encoder to replace it, since the pulley is mounted to the shaft.

I found the info on the encoder after doing a lot of digging on Google.
It's a 1024 PPR encoder rated for 10k rpm with the following pin-outs:
A = A (PA)
B = Z (PZ)
C = B (PB)
H = +5VDC
K = 0VDC
N = /A (/PA)
P = /Z (/PZ)
R = /B (/PB)
Thought I'd record it here in case someone else needs the info in the future.

That should be an excellent encoder. Tough to find ones rated above 5Krpm. The mating Cannon connector should be easy to get from Digikey, Mouser, Newark/Element14.
