Clean everything up. Label your wiring. Plan things out.
You are best to have the motors unbelted from the screws at least until you have the motors turning properly.

If you run a 3 phase converter on single phase, the input current will be sqrt(3), or about 1.73 times that of a 3 phase circuit. Rounding that up, you can use a VFD rated for twice the HP to run that motor.

Hitachi put out a tech bulletin stating that you can use a 3 phase VFD on single phase if it is rated for twice the HP as the motor you are running. So coming from Hitachi, it should be sound advice.

EDIT Sorry it's listed on the quote...they're included with my DMM order
I need some clarification on the drawing "1-S14989-ACORN_rev4_DMM_DYN4_with_DMM_INTERFACE_CABLE" For the DB25 it states DO NOT CONNECT H6 TO DYN4 DRIVE. Instead It shows a cable number coming from the DYN4 drive. I assume that's a DMM part number CA-CUACRN-M4-05 and should come with the kit

The DB25 cables do not come with an Acorn kit. You have to order them at the time you purchase your DYN4 drives.

Your other option is to make your own signal cables.
Many are having better luck connecting to the DB25 connector. There are many posts on this topic. Just search DYN4

I'm going to get a new E Stop - it looks like a I need 2 NC contacts are there any requirement for voltage/current or other options. Any good sources Automation Direct has a box but I think I just want the switch
EDIT On closer inspection of my old switch I may be able to add a contact block...

I like these because they are metal frame and use common contact block. It comes with one, you will have to order a second NC contact block

I'm getting close to having most the items identified and ordered. There are a few areas that I have questions.
I haven't found an item to use for Mounting the Acorn on a DIN rail. Amazon seems to have an item that may work for the relay board - I can't print my own..
I bought a "kit" of Dinkle terminal blocks off Ebay but I'm looking to find a place that offers longer rails and some color mix and match flexibility without having to navigate through HUGE list of options on the Mouser site. Is there a preferred brand of terminal block - perhaps by a company that makes a variety of related items to help focus the search?. I'd like to get brackets to mount rails to the back panel - it should be an easy item but finding a simple hat shaped bracket is tougher than expected

Automation Direct is a good source for DIN rail and accessories. Free 2 day shipping over $50.

DIN rail - they offer a few types.

This clip can be handy for attaching things to DIN rail

This bracket mounts the DIN rail off the back plane.

Amazon has several Dinkle DIN terminal block kits.

SLODAT your links were very helpful. I had done some searching on AD, specifically for the DN-SSB25-10 - what I call a hat shaped bracket, but the text I entered never got any results. Lesson learned is that AD has hidden gems just have to be diligent.
