I corresponded with Marty tonight on Facebook to find some E-Stop Switches. I found what I needed (thanks, Marty!) and thought I would share my links in case it helps someone else.
Most E-Stop switches I found had one NO switch or one NO and one NC. I needed dual NC. Marty recommended the metal switch assemblies and with these you can swap switch modules.
Here is what I ended up purchasing.
I picked up a few of these 2 for $7

For now, I will remove switches from some stops to gang them to get my dual NC E-Stops.
Meanwhile, I will wait for the slow boat from China to deliver these replacement NC Modules. (I may buy some NO modules, too so I can assemble whatever I need)

I have used a few of these estop switches with enclosures from automation direct. not as cost effective as the ones you purchased, but if you cannot wait on the slow boat, they have them in stock and you can get them pretty quick
