Not sure if this will work for you or not but I have a used encoder I pulled from a working Holz-Her CNC router and I have it listed on ebay currently. Here's a link to the auction and there's a link to the data sheet for the encoder. I have no idea if it'll work with Acorn or not as I've never hook...

You do know you can turn the spindle off and on manually from the stock VCP and vary the speed, yes? I guess I'm confused at what you are trying to do or why. Just wire the VFD spin forward wires to a relay and set that relays output to SpinFWD in the wizard and you can control it from the stock VCP...

Any of the sensors you linked to will work. I've used the expensive Balluff sensors and the Chinese ones and they all worked.
