You can measure dc volts on the direction pins, ~5 volts vs ~ a few tenths of a volt for pos vs neg movement, unless inverted. But, you will need a scope to verify step signal

I have not been able to find any documentation on the acceleration setting. Usually acceleration has units of m/s^2 or ft/s^2. Yes, Oriental's docs are thorough, if not close to overwhelming! If you can simply reset to factory defaults, they will work just fine with most controllers. If you do succeed, there may be a cottage industry there for you!
