What are the cat ends that plug into the all in one board and the other parts for the shielded eithernet cable?

It is a RJ-45 Shielded CAT5E cable and jack. Are you trying to make your own? We sell Ethernet Cable in various lenghts, you can also source it all over the internet, as long as its Shielded CAT5E or above it should work.

If you are looking to build your own I have attached a Technical Bulletin with the full details.
