I'm not using steppers but I would suspect that you would still want a shielded cable to help keep noise to a minimum. What gauge do your motors recommend for wire size?

I can't tell you definitively what to use but I can tell you that I wouldn't use Cat anything for this. Cat 5 is 100mb, 5e/6 is 1000mb, 6a/7 is 10000mb. In fact I searched high and low and only found 2 connectors in the US in stock at a company and bought them both. Ok so the answer to number 1 is the first picture from your wiring diagram is correct. The second picture from the same Centroid Oak install manual is wrong.
