Go to the input assignment page and click on the green circle next to your EStopOk input. It should turn red indicating that it will function as NO.
ACORN will have 8 inputs here but the picture should help you get to the right place.

There's two paths that I can see:
1. Wire to the output relays and choose the NO or NC contact depending on whether or not the enable input needs to conduct to be on.
2. Find the line in the PLC and invert the behavior.

It is not a good idea to have an inductive load (i.e. relay or contactor coil, DC motor, etc) without some means of protecting from the energy spike that results when the current is cut off.
